(2) NOTHING: means SOMETHING & you need to be worried.
(3) GO AHEAD: this is a dare, not permission, DO NOT DO IT.
(4) WHATEVER: A woman's way of saying SCREW YOU.
(5) THAT'S OK: She is thinking long & hard on HOW & WHEN you will pay for your mistake.

My Special UN-NAMED Meal! And Veggie Coconut Casserole

My Special UN-NAMED Meal!
tofu shirataki noodles (health food store)
K so I put olive oil and the noodles in a skillet medium heat I added green peppers, spinach, onions, garlic, boca burgers (veggie burgers) plain tomato sauce and I cooked it til it looked and smelled yummy! Sorry I dont have times or how much of this or that Thing I do is if I dont like the taste I add seasoning that I can have to it garlic cajun blah blah ya. Im gonna eat my dinner now! So yeah mess around with it add things dont add things switch it around...give it a shot!



•Veggie Coconut Casserole
1 teaspoon minced parsley
• 1 teaspoon minced oregano
• salt and pepper
• 1/8 teaspoon nutmeg
• 1 bay leaf
• 2 minced garlic cloves
• 1 teaspoon olive or coconut oil
• 1 red bell pepper, cut in strips
• 1 cup of yellow onion, in strips
• 1 cup squash, in strips
• 1 cup zucchini, in strips
• 1/2 cup green peas
• 1/2 cup coconut milk*
• 1/2 cup dried flaked coconut
• 1/2 orange (optional)
Mix the garlic, parsley, oregano, salt, pepper, and nutmeg.
Lightly oil a terrine or an oven proof dish with olive or coconut oil.
Preheat the oven at 390 degrees F.
Place the vegetables in the dish in alternate layers, sprinkling each layer with the spice mix.
After the last of vegetables and spices, pour the coconut milk and sprinkle with the coconut. Top with orange slices.
Cover and bake until vegetables are tender. About 15 minutes. Top with fish fillet

Almond Flour Muffins =) Healthy and Yummy!


Almond Flour Muffins
• 4 ounces blanched almond flour (about 1 cup)
• 4 ounces eggs (about 2 large eggs)
• 1 ounce agave nectar (around 1 tablespoon)
• ¼ teaspoon baking soda
• ½ teaspoon apple cider vinegar ½ tsp cocoa ½ tsp cinnamon ½ tsp canned pumpkin
1. In a medium bowl, combine almond flour and baking soda
2. In a large bowl combine eggs, agave and vinegar cocoa cinnamon and pumpkin
3. Stir dry ingredients into wet, mixing until combined
4. Scoop about ¼ cup of batter at a time into paper lined muffin pan
5. Bake at 350° for 15 minutes, until slightly browned around the edges
6. Cool in the pan for ½ hour
7. Serve with pumpkin butter

Blessed

I think I have been really blessed with the 2 wonderful girls that I have! I have never had any problems with either of them sleeping through the whole night and I think I have to thank my heavenly father a lot for that one because, of my health and with a husband who is a very heavy sleeper! Don't get my wrong, I have had those totally unexpected nights of one or the other waking up. But over all I would say that 95% of the time they always sleep awesome! =)
Also feeling very blessed that my husband has no school this summer! He has been going full time school since we have been married. Never took a break or had time off from school. So it is really nice to have him home with us. Even though this is his very first day..I am thankful to have him around so he can spend some quality time with our girls. Today is a good day =) I love him so much and for all that he does for all of us. He has been wonderful to me and our girls.
